Zero Oil Cooking

Ingredients

  • Gobhi (Cauliflower), cut into small floerets 500 g (1 big flower)
  • Carrots, sliced – 250 g
  • Zeera (Cumin seeds) – 1 tsp
  • Heeng (Asafoetida) – 1/8 tsp
  • Ginger, sliced thin – 1 tbsp
  • Hari Mirch (Green Chilli), slit 2 – 3 or to taste
  • Dhania (Coriander ) powder – 1 tbsp
  • Garam masala – ½ tsp
  • Salt – 2 tsp
  • Chilli powder – ½ tsp
  • Haldi (Turmeric) – ½ tsp
  • Hara Dhania (Coriander leaves), chopped fine – 2 tbsp

 

Method for Sambhar Powder

  • Dry roast the zeera in a kadahi and add half a cup of water. When it comes to a boil, add the heeng and ginger
  • When the mixture comes to a boil, add the hari mirch, dhania powder, salt, chilli powder and haldi
  • Mix well and add cauliflower and carrots
  • Let it cook in a covered pan
  • Stir a few times and sprinkle water in case it scorches
  • Serve hot – garnished with hara dhania
