Vegetable Curd Rice

Ingredients

  • 1 Carrot – 1/2 cup
  • 1 peeled Cucumber
  • Rice – 1/2 cup
  • Milk – 1 1/2 cup
  • Mustard seeds – 1/2 tsp
  • 2 slited Green chillies
  • Finely chopped Ginger – 1 tsp
  • 1 fig Curry leaves – finely chopped
  • Cooking oil – ½ tsp
  • A pinch asafoetida
  • Pepper powder to taste
  • Salt to taste

 

Method for Sambhar Powder

  • Cut the carrot, cucumber and beans into small pieces
  • Pressure cook the rice with one cup of milk and 1 cup of water for 2 whistles
  • Mash gently the cooked rice and allow to cool
  • In a pan heat the oil, add the mustard seeds, green chillies and saute until splutters
  • Add the fried ingredients to the cooked rice and mix
  • Add the vegetables, ginger, curry leaves, pepper powder, asafoetida and salt, mix well
  • Add the remaining milk and mix well
  • Finally add the curd, mix well and cook for couple of minutes
  • Serve with Indian curries
