Raita Gajjar Ka

Ingredients

  • Natural yoghurt or dahi – 2 cups
  • Grated carrots – 1 cup
  • 1 green chilli-finely chopped (optional
  • A few fresh mint leaves, chopped (optional)
  • Salt, adjust to taste (black rock salt is good, buy from Indian grocers – 1/2 tsp
  • Freshly ground black pepper – 1/2 tsp
  • Coarsely ground, roast cumin seeds (dry roast in microwave or in a wok or frying pan – 1/2 tsp

 

Steps to be followed

  • Place carrots in a pan of 2 cups of boiling water, simmer for 3-4 minutes
  • Drain and allow to cool. Squeeze excess water out
  • Beat yoghurt, salt, black pepper and roast cumin together
  • Add carrots and green chillies and mix well. Adjust salt. Serve chilled
